The Lemon Loaf to Love

Looking for a lemon loaf you’ll love? 🍋🍞Try this healthy take on a delicious loaf. Easy to make gluten free or dairy free, this loaf will be life of the party.

Ingredients:
-1/2 cup oat flour
-1 cup all purpose flour
-1/2 tsp salt
-1 tsp baking powder
-1/2 tsp baking soda
-1 egg, room temp
-1/3 cup maple syrup
-1 tsp vanilla
-2 individual yogurt containers (1 vanilla Chobani, 1 df vanilla bean Forager), room temp
-1/4 cup coconut oil, melted but not hot
-1/4 cup lemon juice
-1.5 tbsp lemon zest
-1 tbsp poppyseeds

For the glaze:
-1/2 cup powdered sugar
-1-3 tsp lemon juice, or until desired consistency is reached

Instructions:
1. Preheat oven to 350°F
2. Sift together flour, baking soda, baking powder, and salt
3. In a separate bowl, beat the egg and add the yogurt, maple syrup, vanilla, coconut oil, lemon juice, and lemon zest and mix well
4. Add the wet ingredients to the dry ingredients and fold together. Add in the poppyseeds and fold. Make sure not to over mix in this step!
5. Lightly spray a loaf pan and pour in the mix. Bake for 40-45 minutes or until a toothpick comes out clean
6. While it cools, mix together the ingredients for the glaze. When the bread is completely cooled, pour the glaze over and sprinkle with lemon zest
